Tom Brown at Restaurant Mayfair
Chef Patron of Cornerstone in Hackney Wick and Pearly Queen in Shoreditch, Cornish chef Tom Brown began his cooking career working in restaurants around the South-West, including Rick Stein’s, before he met two-Michelin-starred Nathan Outlaw.
Having started working with Outlaw at St Enodoc Hotel in Rock, Cornwall, Tom quickly worked his way up the ranks to Head Chef. After three years as Head Chef at St Enodoc, Tom moved to London and worked as Head Chef of Nathan’s London restaurant, Outlaw’s at The Capital, where he retained their coveted Michelin star.
In 2017, Tom left Outlaw’s at The Capital to open his own restaurant, Cornerstone, in Hackney Wick, which opened to rapturous acclaim in April 2018, receiving numerous prestigious awards including a Michelin star in 2021. At Cornerstone, Tom’s unique style of simple, seasonal and produce-driven cooking is showcased, with regularly-changing menus. In November 2023, Tom also opened Pearly Queen, a restaurant and oyster bar in Shoreditch, where he continues to champion outstanding produce.
In addition to his restaurant work, Tom has also appeared on various TV programmes, notably making it to the finals of Great British Menu in 2018, having won the South West heats.
Tom Kitchin at Restaurant Mayfair
One of Scotland’s leading chefs, Tom Kitchin is proprietor of The Kitchin in Edinburgh’s Leith waterfront, which was awarded a Michelin Star in 2007, just six months after opening, making Tom Scotland’s youngest Michelin-starred chef proprietor at the age of just 29. The Kitchin has since retained its Michelin star, as well as becoming Scotland’s only restaurant to receive 5 AA Rosettes in 2015. Tom and his wife, Michaela portfolio now extends across Edinburgh and East Lothian with a further three venues leading gastropub The Scran & Scallie in Stockbridge, The Bonnie Badger, their first restaurant with rooms in Gullane, East Lothian, and local neighbourhood restaurant and bar, KORA by Tom Kitchin in Bruntsfield which opened in July 2022.
Before opening The Kitchin, Tom garnered experience in some of the world’s best kitchens, encompassing early training at the Gleneagles Hotel, followed by stints working alongside Pierre Koffmann at the Three Michelin-starred La Tante Claire restaurant in London, at Three Michelin-Starred restaurant Guy Savoy in Paris, and Alain Ducasse’s Three Michelin-starred Le Louis XV in Monte Carlo.
Tom’s ethos and success is greatly inspired by his genuine love of working with the very best seasonal, Scottish ingredients and his ‘From Nature to Plate’ philosophy, which is now synonymous with his portfolio of successful restaurants
In addition to his restaurant work, Tom Kitchin has also authored four successful cookbooks and has become a well-known face on television, having appeared on BBC’s Saturday Kitchen, BBC2’s Remarkable Places to Eat and on Men in Kilts, A Roadtrip with Sam Heughan and Graham McTavish. Tom has, on many occasions, joined some of the UK’s most renowned chefs on the MasterChef Final Chef’s Table panel as a judge. In June 2012, Tom also received an Honorary Doctorate of Arts degree from Edinburgh Napier University for his significant contribution to Scottish Food Culture.
