Tom Brown at Restaurant Mayfair
Chef Patron of Cornerstone in Hackney Wick and Pearly Queen in Shoreditch, Cornish chef Tom Brown began his cooking career working in restaurants around the South-West, including Rick Stein’s, before he met two-Michelin-starred Nathan Outlaw.
Having started working with Outlaw at St Enodoc Hotel in Rock, Cornwall, Tom quickly worked his way up the ranks to Head Chef. After three years as Head Chef at St Enodoc, Tom moved to London and worked as Head Chef of Nathan’s London restaurant, Outlaw’s at The Capital, where he retained their coveted Michelin star.
In 2017, Tom left Outlaw’s at The Capital to open his own restaurant, Cornerstone, in Hackney Wick, which opened to rapturous acclaim in April 2018, receiving numerous prestigious awards including a Michelin star in 2021. At Cornerstone, Tom’s unique style of simple, seasonal and produce-driven cooking is showcased, with regularly-changing menus. In November 2023, Tom also opened Pearly Queen, a restaurant and oyster bar in Shoreditch, where he continues to champion outstanding produce.
In addition to his restaurant work, Tom has also appeared on various TV programmes, notably making it to the finals of Great British Menu in 2018, having won the South West heats.
